This year is almost over and we invite you to surprise your guests with this delicious oven roasted ribs recipe.We hope you have a very happy holiday and enjoy the meal. 2 kg of pork ribs

2 Onions

5 Potatoes

1 Red bell pepper

1 Green bell pepper

16 Tomatoes cherry

1 Cup of dry white wine

Chopped parsley

Salt, pepper and olive oil

For marinade: 4 Teas of garlic, parsley and olive oil


Preheat the oven for 10 minutes at 200ºC. In a baking dish, pour in a stream of olive oil and place the pork ribs, salt on both sides and bake for 30 minutes.

Meanwhile, cut into julienne strips 2 onions, the bell peppers and slice the potatoes.

Remove the meat from the oven and reserve. Add the onions, bell peppers and potatoes to the oven. Sprinkle with some olive oil, salt and add the meat. Stir in the cherry tomatoes and moisten all with the white wine. Take it all to the oven for 20 more minutes.

Begin to prepare our marinade and put in a mortar the garlic, the parsley, olive oil and a little bit of salt. Mash everything until obtaining a semi liquid sauce.

After 20 minutes, add the marinade to the meat, spreading it out evenly over the surface and let it cook for 10 more minutes.

And we already have our delicious roasted ribs ready … Now we only have to prepare the New Year’s Eve dinner, have our grapes[1] ready and toast with a good cava!!!


[1] Eating 12 grapes at midnight on New Year’s Eve is both a tradition and a superstition in Spain. Rare is the Spaniard who will risk poisoning their fate for the coming year by skipping the grapes, one for each stroke of midnight.
